The most succulent part of the salmon, according to some. The recent discussion over stinkheads caused me to consider adding this to Wordie. The indigenous cultures in Alaska that consumed stinkheads probably had no other way of preserving the small bits of salmon cheeks, and they did not let any potential food source go do waste.
Halibut cheeks can be much larger on a fish that weighs more than 300 pounds.
Still, it must be an acquired taste...
